Why does the baker keep the mold in a separate cupboard?
The smell arrives before I understand what’s burning—not burning exactly, more like fruit that’s given up, the kitchen walls darkening with what looks like soot but shifts when I blink, settling on my hands and the copper-edged molds that line the racks, each one humming at a frequency I can feel in my teeth, a pressure that radiates down through my shoulders. The baker hands me something wrapped in wax paper that’s begun to fragment, and through the tears I can see the loaf inside is frosted with gray powder—what she calls “the reduction”—and the paper is disintegrating faster than I can unwrap it, she’s already moving to the next batch, speaking in someone’s voice from daytime television, something about pruning the overgrowth, the dogwoods are completely out of control, and I’m watching her rake the finished loaves—the memories—into a bin that’s already full, already overflowing with smaller bins nested inside it, a recursion of containers, and she says we can’t put these in the compost, we can’t let them spread, they’ll contaminate the foundation, and the smell is getting worse, getting thicker, a density of spoilage that has actual weight now, pressing against the sealed windows, and I notice the racks are bent under the load, the wood soft in a way that suggests it’s been storing something for a very long time, nutrient-dense rot that takes years to break down, and the baker is moving faster now, less careful, less precise, and there’s a crack forming in the tile floor, hairline at first but widening as I watch, and she doesn’t seem to see it, just keeps working, keeps raking, keeps stacking the containers, and I want to tell her that something is about to give way, that the whole system is singing a warning underneath all the other sounds, a fragility that was always there but is only now becoming audible, that you can feel it in how the air is moving differently, in how the pressure is building, in how the careful architecture of shelves and bins and cooled air is approaching a threshold beyond which recovery becomes impossible, and then I’m standing outside the bakery looking at the windows frosted over with something that isn’t frost—it’s the powder again, the soot, the reduction—coating everything from the inside, and I can see the baker is still in there, still working, still unable to stop, and the building behind the frosted glass is doing something that isn’t quite movement, isn’t quite stillness, something in between those states that has no name and therefore no cure.
